In today's rapidly changing world, ensuring food safety is becoming increasingly challenging. Global megatrends such as climate change, urbanization, and the drive for sustainability are reshaping the landscape of food production and safety. Drawing on insights from the recent comprehensive review by Thorsen et al. (2025), it's clear that our environmental and sustainability efforts are crucial for maintaining a safe food supply.
Climate change poses significant risks to food safety by increasing the occurrence of foodborne pathogens, mycotoxins, and agrichemical residues. Warmer temperatures and extreme weather events can enhance the survival and spread of harmful microorganisms, affecting both crops and livestock. For instance, increased rainfall and flooding can lead to microbial contamination of water sources used in agriculture and aquaculture. Mitigating these risks involves implementing robust agricultural practices that enhance soil health and reduce erosion, utilizing AI and big data analytics to predict and manage climate-related food safety risks, and developing drought-resistant crop varieties and improving water management systems.

Aquaculture and agriculture are integral to our food supply chain. However, these sectors are also susceptible to environmental changes. For example, rising water temperatures can lead to harmful algal blooms, which pose risks to seafood safety. Similarly, changes in soil quality and water availability can impact crop yields and safety. Sustainable practices such as adopting controlled environment agriculture (CEA) techniques to mitigate the effects of climate change, ensuring that aquaculture practices maintain water quality and prevent contamination, and promoting biodiversity to enhance ecosystem resilience and reduce the reliance on chemical inputs are essential.
Food safety is closely linked to food security, and addressing inequalities in access to safe food is essential. Lower-income regions and smallholder farmers are often more vulnerable to food safety risks due to limited resources and infrastructure. Supporting local farmers with education and resources to implement sustainable practices, collaborating with international organizations to share knowledge and technologies, and developing community-based solutions that are tailored to specific needs and conditions can help address these challenges.
